Dinner this evening was a warm salad of sautéed spring greens, pepper, tomatoes, green beans & red onion, topped with a baked salmon fillet garnished with toasted garlic & parsley breadcrumbs and a wedge of lemon.
This was the perfect light meal that I was craving tonight, that made me believe it was actually Spring despite the cold and rainy weather outside!
My younger sister is currently at university in Newcastle and I love coming to visit her at least a couple of times a year, so it was absolutely lovely for me to bring Meze & More up here and host a supper club for her in her flat with her uni friends last night.
The girls were such great guests and it was a pleasure to hear that they enjoyed the meal as much as I enjoyed preparing it!
I went on a bread making course at the weekend, and our head chef for the day told us a ‘review’ he had heard from his friend about a certain restaurant he’d visited. ‘’It wasn’t bad, it was alright, but it was just Tuesday tea’’ – so not exactly the best of reviews!
Sometimes our Tuesday (or other weekday) evening meal is just eggs & bacon on toast or a simple omelette, which are both absolutely brilliant meals when that’s what we are craving or we get in later than usual and need something quick and easy to fill us up, but tonight it’s something a bit more exciting.
Lamb Meatballs baked in a Rich Tomato Sauce with Feta & Pine Nuts, and some herby Roasted Potatoes & Veg with Wilted Spinach. Hopefully would be worth a better review!
Monday dinner tonight is a Feta & Avocado Salad with Spanakopita portion number 3. (Portion 4 is lunch tomorrow!)
As is often the case when I’m trying recipes out, we end up with lots of leftovers… which is never a bad thing in my view!
Finished the weekend off by trying out some potential dishes for the Spring supper club menu.
This evening our Sunday dinner was Lamb Koftas, Spanakopita, Tzatziki, Tahini Sauce, Pitta, and Tomato, Red Onion & Pine Nut Salad.
Feeling very full and sleepy now – time to collapse on the sofa in front of the TV!
I am in the middle of preparing the final dishes for this evening’s supper club, which is a Winter themed menu despite it being more like the middle of Spring out there today! What a beautiful February day☀️
The unseasonably warm sunny weather has inspired me to have this for lunch – Feta & Avocado Salad with Toasted Mixed Seeds & Homemade Hummus. I may be having a busy Saturday but I am never too busy for lunch! 😋
One of my favourite dinners to make when I am cooking for just myself – Feta, Spinach, Pea & Sweet Potato Frittata with a Tomato, Red Onion & Pine Nut Salad.
