Nostalgic Sunday Bake

Yesterday I baked these Orange & Cranberry Flapjacks which will be great as a mid-morning or afternoon snack throughout the week (or even breakfast!).

They’re darker in colour than a typical flapjack due to using dark brown sugar, which also makes them taste quite caramel-like. There’s also some marmalade in there which adds to the slightly bittersweet flavour, which I personally really like as my taste for sugar has lessened over the years!

I haven’t made flapjacks in so long, it was nice to create one of my favourite childhood treats with a bit of a twist!

Fresh Pesto

Look at that colour 😍 worth making from scratch for the colour alone, but the fresh, vibrant flavour is also incredible! Will be serving this later as part of our dinner when our friends from Lincoln come to visit us. Saturday morning spent very happily in the kitchen! 👩🏻‍🍳

Sweet Potato Gnocchi

This was my first attempt at making any kind of gnocchi and tonight we had it for dinner with sausage, garlic, chilli, kale & tomato.

Tasted great but next time I would make the gnocchi dumplings a little smaller and with possibly less flour (although with it being sweet potato, the dough was pretty wet so more flour was needed in order to work with it) – overall, a successful new dish to add to the repertoire for practising! 🍠

New Year’s Dinner – Asian Style

At the request of my other half, tonight we have kicked the new year off with an Asian style meal 🥡

Korean Chicken Wings with Sesame & Fresh Chilli, Ham & Mushroom Egg Fried Rice, and Charred Tenderstem Broccoli with Crushed Peanuts.

The sweet but sour and slightly spicy flavours were just what we were craving after all of the British comfort food eaten over the festive period (even though it was delicious!)

Festive Supper Club

Last night I hosted a Festive Supper Club for a couple of my oldest and closest friends, with dishes that stayed true to my Middle Eastern and Persian style of cooking but with a traditional British Christmassy twist – adding Turkey, Cranberries, Sprouts, Chestnuts and Mince Pies throughout the menu!
