Harissa Roasted Cauliflower with Lemon & Flaked Almonds

Serves 4

1 whole cauliflower
2 tbsp. harissa
2 tbsp. honey
Olive oil
1/2 tsp ground cinnamon
1 tsp ground cumin
Sea salt and ground black pepper
1 lemon, sliced
Fresh flat-leaf parsley
Flaked almonds

1. Preheat oven to 200°C / 180°C fan. Cut away the outer leaves of the
cauliflower, then cut into large florets.
2. Combine the harissa, honey, olive oil, cumin, cinnamon, salt and pepper
in a small bowl.
3. Mix well, then brush over the cauliflower florets. Roast in the oven for
25-30 minutes until cooked through.
4. Meanwhile, lightly toast the flaked amonds in a dry frying pan and chop
the parsley. Set aside.
5. Once the cauliflower is tender and golden, tip into a serving dish and
garnish with the flaked almonds and parsley.
