Oven Baked

Dinner tonight is Lemon & Basil Baked Salmon with a Crispy Kale and Roasted Vegetable Salad.

I’m without a functioning hob at the moment so my meals are currently either oven, microwave or toaster based… I would normally have some rice or cous cous with this but a piece of toast later will have to do as my evening carb!

Usually I would stir fry broccoli and kale but they are equally lovely roasted with a little olive oil, seasoning and just a splash of water, and cooking them this way means there is no chance of them becoming soggy and flavourless.
