Griddled Courgette & Halloumi Salad

Definitely more of a spring/summer recipe but I had both courgette and halloumi sitting in the fridge which were desperate to get together on a plate! πŸ˜‹

The two ingredients are completely different in both flavour and texture but the combination works brilliantly as a Bigger Meze dish, with a lemon and herb dressing and topped with some toasted pine nuts.

We just had this for dinner tonight with some sweet potato wedges and salad (pretty moderate for us!), but I can see it featuring on a Summer Supper Club menu alongside some of my other favourite larger plates such as grilled meat kebabs, tabbouleh, sumac roasted new potatoes and flatbreads with various dips! πŸ‘ŒπŸΌ
