I hate letting food go to waste, and I had a naked little orange sitting in my fridge since last week, when I used its zest to make a batch of Bakklava.
So tonight I decided to make a loaf cake using the juice of the orange. In the interests of reducing potential waste, I also added some cinnamon roasted nuts that I had hanging around too.
Voila – nutty orange loaf cake. A contender for a dessert on a Sweet Meze menu I think! Would be lovely served warm with some ice cream or creme fraiche.
