Healthy Wednesday

After quite an indulgent meal out last night, this evening I was feeling in need of something a bit more virtuous!

I settled on a salmon fillet with a side of tabbouleh: a traditional Lebanese veggie dish made using bulgur wheat, tomatoes, spring onion or shallot, lots of fresh herbs, olive oil and lemon juice.

Tabbouleh is a great option to have on a meze platter to freshen things up amongst some of the richer or creamier items. Also works really well on its own with some crumbled feta on top as a light meal for one – will be using tonight’s leftovers to make this combo for lunch tomorrow!
